Marble Cake

Chocolate Orange Marble Cake Recipe

This recipe is for the classic combination of chocolate and orange in a delicious moist sponge.


Cake mix

- 3 eggs
- 175g / 6oz of self-raising flour
- 175g / 6oz of caster sugar
- 175g / 6oz of soft margarine
- the grated rind of 2 oranges (use the fine side of the box grater)
- the juice of 1 orange
- 1 tablespoon of cocoa powder


- 175g / 6oz of icing sugar (sieved)
- 25g / 1oz of soft margarine
- the juice of (the other) 1 orange


1) Line the base of and grease a 23cm / 9" springform tin and put the oven on to 180 degrees / gas mark 4
2) Put the eggs, flour, sugar, margarine, orange rind and juice into a bowl and mix until smooth (feel free to use the mixer!)
3) Dot spoonfuls of half of this mixture in the base of the prepared tin
4) Mix the cocoa with the remaining mixture and then pop this into the tin with a spoon filling in the gaps in the tin
5) Swirl the chocolate and orange mixtures together with the back of a knife or a palette knife - but only a little as you want a marbled effect and not to combine these
6) Bake for 25 minutes (for an AGA use the third set of runners down in the baking oven for 30 minutes) until risen, firm and a tester or skewer inserted comes out clean
7) Leave to cool for 10 minutes in the tin then remove to cool fully on a wire rack
8) Mix the icing ingredients together in a bowl until smooth and spread over the cake with a palette knife
