Chocolate & Nutella Victoria Sandwich 

Ingredients

For the cake

- 2 tablespoons of cocoa

- 3 tablespoons of boiling water

- 8oz/225g of soft margarine

- 8oz/225g of caster sugar

- 8oz/225g of self-raising flour

- 4 eggs

- 2 teaspoons of baking powder 

For the filling and topping

- 2oz/50g of soft margarine

- 6oz/175g of sifted icing sugar

- 2 to 3 tablespoons of nutella

- Grated chocolate to decorate 

Method

1)   Preheat the oven to 180°C/350°F/Gas mark 4.

2)   Grease and line two 8inch/20cm tins with greaseproof paper.

3)   Mix the cocoa and boiling water to a paste in a bowl and leave to cool a little.

4)   Add the remaining cake ingredients and mix together well.

5)   Divide the mixture between the two tins evenly and then put them in the oven for 25 minutes or so until they are well risen and a tester or skewer inserted into the cake comes out clean.

6)   When cool enough to handle, remove from the tins and peel off the greaseproof paper then leave to cool fully on a wire rack.

7)   To make the butter cream filling, just mix the margarine and icing sugar together in a bowl until combined. You might need to add a little milk depending on the water content of the margarine you are using.

8)   Turn one cake upside-down and spread the nutella followed by half the butter cream. Put the other cake on top the right way up to make a sandwich and then cover the top with the remaining butter cream. Add some grated chocolate to decorate and then enjoy!
