Buns, Muffins & Cupcakes

Everything you need to bake buns, muffins and cupcakes.

There are loads of different buns and muffins to make of course but here is a really good muffin recipe for you to try:

Fruit Muffins 

These are straightforward good muffins and you can liven them up by adding the dried fruit of your choice – there are loads of alternatives these days so choose whatever you like best and give it a go (or even chocolate chips if that sounds better). If you want to throw caution to the wind then use the melted butter in favour of the vegetable oil for a richer texture, more like coffee-shop muffins. 

Makes: 10 generous muffins

Ingredients

- 225g / 9 oz of plain flour

- 3 teaspoons of baking powder

- ½ teaspoon of salt

- 100g / 3 oz of caster sugar

- 1 egg

- 85-140g / 3-5 oz of dried fruit (or 85g / 3 oz of chocolate chips if you prefer)

- 240ml / 8 fluid oz of milk

- 90ml / 3 fluid oz of vegetable oil (or 85g / 3 oz of melted butter instead for a richer texture)

Method

1) Grease your muffin tin if you are not using silicone (or line the muffin tin with cases if you prefer)* and put the oven on at 190 degrees (gas mark 5 or 6)

2) Sift together the flour, baking powder, salt and sugar into a bowl

3) In another bowl beat the egg with a fork then stir in the milk followed by the oil (or melted butter)

4) Pour the mixed liquid ingredients into the dry ingredients. Now add your choice of dried fruit too. Stir them all together until they are just mixed and you cannot see any dry floury bits. This should not take long as you want a lumpy batter so there is no need to stir a lot

5) Tip the mixture into the muffin cases* and bake for 20-25 minutes until lightly browned and springy when gently pressed (use the baking oven for an AGA and allow a couple of extra minutes). Leave to cool for a few minutes and then enjoy warm or cold

*Tip: Muffin tins

With this recipe as you are making just 10 muffins out of the 12 holes in a standard tin then use all the holes around the outside of the tin leaving the two centre ones clear. This should help all your muffins to cook evenly.
